Bison Breakfast Patties

Ingredients

1 pound ground bison

1/4 onion, finely chopped

1/4-1/3 tsp salt

1/2 tsp black pepper or cayenne

1/4 tsp cinnamon

1/4 tsp allspice

1 tbsp rosemary, finely chopped

1 tbsp parsley, finely chopped

Directions

Fry up a batch early in the week and then grab a few out of the fridge each morning for breakfast or an afternoon snack.

1. Mix together all ingredients in a bowl.

2. With your hands, form meat into 12 rounded patties about 1/2 inch thick.

3. Warm a little oil in a pan over medium-high heat and cook patties about 3 minutes on the first side and slightly longer on the second side, until nicely browned and slightly pink in the middle.
